Chocolate and bananas – two great tastes that go together
Ingredients
- 1 1/2 cups mashed bananas
- 2/3 cup sunflower seed oil
- 1 egg, beaten
- 1 1/2 teaspoon vanilla extract
- 2 cups flour replacement
- 1/2 cup white sugar
- 2 tablespoons unsweetened cocoa powder
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup of semisweet chocolate chips
Instructions
- Preheat oven to 425 degrees
- Place muffin liners in muffin pan
- In a medium bowl blend the bananas, oil, egg and vanilla together
- In a large bowl combine the flower, sugar, cocoa, baking powder, and salt
- Stir in banana mixture until just mixed
- Fold in chocolate chips
- Spoon batter into muffin tins – filling 3/4 full
- Bake in preheated oven for 15 to 20 minutes
- Remove to wire rack to cool
