Healthy Zucchini Banana Bread
Ingredients
1 cup shredded zucchini
2 eggs, lightly beaten
2 tsp vanilla extract
1 tsp lemon juice (or vinegar)
2 cups rolled oats (processed into flour)
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt

The lemon juice is used to interact with the baking soda and help the loaf rise.
