Chocolate Chip Banana Muffins

Chocolate and bananas - two great tastes that go together
Ingredients
  • 1½ cups mashed bananas
  • ⅔ cup sunflower seed oil
  • 1 egg, beaten
  • 1½ teaspoon vanilla extract
  • 2 cups flour replacement
  • ½ cup white sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup of semisweet chocolate chips
Instructions
  1. Preheat oven to 425 degrees
  2. Place muffin liners in muffin pan
  3. In a medium bowl blend the bananas, oil, egg and vanilla together
  4. In a large bowl combine the flower, sugar, cocoa, baking powder, and salt
  5. Stir in banana mixture until just mixed
  6. Fold in chocolate chips
  7. Spoon batter into muffin tins - filling ¾ full
  8. Bake in preheated oven for 15 to 20 minutes
  9. Remove to wire rack to cool
