  • 2 tablespoons vegetable oil divided
  • ½ medium sweet onion cut into strips
  • 1 medium red bell pepper cut into strips
  • 1 medium green bell pepper cut into strips
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • Kosher salt and freshly ground black pepper to taste
  • 6 ounces shredded sharp cheddar cheese
  • 6 ounces shredded pepper jack cheese
  • ⅓ cup chopped fresh cilantro leaves
  • 6 (8-inch) flour tortillas
